Recipe: Orange Yogurt Muffins
Ingredients:
120g plain flour
75g sugar
1 tsp baking soda
1/4 tsp salt
150g yogurt
1 egg
1 tbs of orange rind. (I also add in 1 tsp of orange juice)
50g canola oil ( i used sunflower)
1 tsp vanilla essence
Method:
1) Preheat oven to 180 degree C
2) Sift over flour, baking soda and salt. Set aside.
3) Place sugar, oil, egg, yogurt and orange rind in a big bowl. Whisk to combine.
4) Fold over the dry ingredients into the wet ingredients. Gently mix well.
5) Scoop the batter into your desired paper cups and bake for 15-20 mins or till the skewer come out clean
Lemon Cream Cheese Frosting (Yield: For more than 10 cuppies for I want to make extra for spreading purpose)* adapted from Martha Stewart
Ingredients:
210g cream cheese (room temperature)
110g unsalted butter (cut into pieces, room temperature)
1 cup icing sugar
1 tsp vanilla essence
Method:
Using a rubber spatula, soften cream cheese in a mixing bowl.Gradually add butter, and beat until smooth and well blended. Sift in icing sugar, and continue beating until smooth. Add lemon rind & vanilla, and stir to combine.







They are so beautiful. I'm sure they will tastes heavenly. Give back the orange muffin to your hubby as compensation lor :)

Yes..i used oil because I love the moisten of the cake.
DeleteI think it shouldn't be a problem using butter. U just need to adjust the quantity of the butter accordingly. You may want to check out this as I used butter.
