Banana Pancake Or Banana Omelette?

When I first read this recipe from Shannon's blog, immediately I registered the method and ingredients needed to make this banana pancake (flour-less) or HB said is looks more like a banana omelette. (hmmm..both names also make sense) Actually you don't really need to remember it so hard after all only 2 main ingredients needed to put up this simple and yet healthy breakfast for the family.

You will need:
Bananas (2 medium )
Egg ( I used one large egg)
1 tbs Milk (optional)
Butter

Mash banana with a fork

Add in egg and milk to mashed banana and whisk well.

Grease a non stick pan with some butter on medium heat. Scoop the batter and pour onto pan. When the pancake starts to form bubbles on the top layer, gentlly use a spatula to loose the bottom and flip over.

A gentle reminder : Be careful when flipping because the batter is very soft and the pancake might break.

**Advisable to make a small one. Mine turn out to be a little thin but crispy on the outside which both my girls love it.

I want a bigger pancake..and top with banana slices. I wish I have some chocolate syrup to drizzle on top of my pancake...Oh yummmy!!
